Mixed Vegetables in Pinzimonio

Mixed vegetables in pinzimonio are a mix of raw vegetables cut into sticks. Great as an appetizer or as a side dish, simple and quick to prepare. A colorful, fresh, light, and above all healthy dish, you can change the ingredients according to the season. I served the vegetables on a single plate and for each person a small bowl with pinzimonio, but you can also serve the vegetables in individual bowls.

Ingredients for Mixed Vegetables in Pinzimonio

  • 2 stalks celery
  • 2 carrots
  • 1 fennel
  • 1 bullhorn pepper (green red)
  • 1 beetroot
  • 1 eggplant
  • to taste cherry tomatoes (not ripe for salad)
  • to taste extra virgin olive oil
  • 1 teaspoon lemon juice
  • to taste pepper
  • to taste salt

Preparation of Mixed Vegetables in Pinzimonio

Let’s see how to prepare the vegetables.

Clean and wash the celery, remove the leaves and strings, cut it into sticks, I used the whitest part. Clean and wash the fennel and cut it into small pieces, trying to make all the vegetables the same size if possible. Take the pepper, mine was two-colored, you can use half yellow and half red, clean them well and cut into strips. Clean the carrots, eggplant, and beetroot and cut them into sticks. Wash the cherry tomatoes, serve on a plate or in a bowl by arranging the sticks all around and the cherry tomatoes in the center. Now prepare the pinzimonio, in a small bowl mix oil, lemon with salt and pepper, you can also add vinegar if you like, mix vigorously with a fork trying to emulsify well.

The pinzimonio is ready.

I recommend using fresh vegetables, if you don’t like pinzimonio you can accompany the vegetables with mayonnaise or tartar sauce.
