The spelt tartlets with cream and blackberries are a very delicious single-serving dessert, suitable as a meal finisher… great for a snack. The spelt shortcrust pastry is a somewhat innovative pastry base, you will be amazed by its slightly rustic taste, a crumbly but at the same time very delicate texture, together with the cream they are an excellent combination.

Spelt Tartlets with Cream and Blackberries Ingredients
- 1.25 cups Spelt flour
- 0.8 cups All-purpose flour
- 2/5 cups Brown sugar
- 6.8 tbsp Vegetable oil
- 1/3 cup Milk
- 1 tsp Baking powder
- to taste (Blackberries)
- 2 1/8 cups Milk
- 1/3 cups Spelt flour
- 3 Egg yolks
- 1 Lemon

Preparation of Spelt Tartlets with Cream and Blackberries
In a bowl, mix the flours, oil, milk, sugar, and baking powder until it becomes a compact dough. Wrap with plastic wrap and let it rest for 1 hour in the fridge. Roll out the dough and place it in mini tart pans… prick with a fork and bake in the oven at 356°F.
Meanwhile, let’s prepare the cream. Bring the milk to a boil with the lemon peel. Beat the eggs with the sugar then add the spelt flour, pour the hot milk while continuing to stir, grate the zest of half a lemon and bring back to a boil until it thickens. Let both the cream and the crust cool down.
Once cooled, cover the crust with a layer of cream and add the blackberries. You can also sprinkle with powdered sugar.
Notes
They keep for two or three days in the refrigerator. Of course, if you don’t like blackberries you can fill them with your favorite fruit.
