- 4 fillets cod
- 9 oz cherry tomatoes
- 3.5 oz capers
- 3.5 oz Taggiasca olives
- to taste parsley
- 1 clove garlic
- to taste salt
- to taste extra virgin olive oil

How to make baked cod with cherry tomatoes
Let’s start preparing the baked cod with cherry tomatoes. Pour some extra virgin olive oil at the bottom of the baking dish and place the cod fillets. Wash the cherry tomatoes and cut them in half or into pieces if they are large.
Add the cherry tomatoes, olives, and capers to the cod, add the sliced garlic clove, chopped parsley, salt, and pepper.
Cook in a preheated static oven at 350°F for 20/30 minutes; the cooking time varies depending on the thickness of the cod, so check before taking it out.
To make it tender and juicy, occasionally open the oven and use a spoon to collect the cooking juice and baste the cod fillets, so they become even more flavorful.
