Ingredients
- 2 slices Genoese focaccia (if you want to make it yourself, the recipe link is above)
- 10 sun-dried tomatoes in oil
- 1 avocado
- to taste mixed seeds (your favorites, in my case flax seeds)

Steps
In the first two boxes, you see the dish prepared by the Monte Carlo restaurant.
As you can see, the avocado toast is garnished by the chef with edible flowers.

Preparing the dish is simple and quick if you decide to buy the focaccia.

Anyway, once the focaccia is prepared or bought, you simply need to cut it into strips.
Meanwhile, drain the sun-dried tomatoes and pat them dry with paper towels to remove all excess oil. Place them in a blender or chopper and blend until you get a paste.
Spread the focaccia with the sundried tomato “paste”.
Slice an avocado thinly.
Francy’s Tip: if you don’t want it to turn black immediately, sprinkle the avocado with the juice of a lemon.
Place the avocado on the focaccia.
Complete, if desired, with some seeds.
An irresistible appetizer but also a complete single dish.
