The base for this recipe is zucchini that I found at the market at 2.50 per kilo, a good price considering the season and the Italian origin.
To prepare this recipe you will need only four ingredients, the preparation is quick and easy.
I had a small portion left over that I brought to the office the next day, and I must say that even reheated it remained delicious.
Zucchini have a low caloric content of 15 kcal per 100 grams, but on the other hand, they have a good fiber content, which helps intestinal regularity, reduces the risk of colon cancer, and controls the absorption of cholesterol and sugars.

Ingredients
- 5 zucchini
- 1 potato
- 3.5 oz stracchino
- 2 tbsp grated Parmesan cheese
- 0.625 cup milk (I used plant-based milk)
- to taste salt
- to taste pepper
Tools
- 1 Mandoline
- 1 Loaf pan
Steps
Slice the potato into thin slices.
Immerse in a bowl of cold water to remove the starch, this way they will remain crunchier.
Slice the zucchini into thin slices using a mandoline.
In a loaf pan, place the zucchini slices.
Add the potato slices.
Finally, add the stracchino.
Create more layers alternating slices of zucchini, potato, and stracchino.
In a cup, pour the plant-based or cow’s milk, add salt and pepper.
Pour the milk into the loaf pan, sprinkle with parmesan and add a drizzle of oil. Bake in the oven at 356°F for about 50 minutes.
