Bagel and Sunday Becomes a Celebration

Here are the necessary ingredients

  • 3.5 oz almond milk (or whole cow’s milk)
  • 0.25 oz sugar
  • 1 tbsp extra virgin olive oil (or 1 tbsp butter)
  • 1.8 cups flour
  • 0.14 oz dry yeast (or 0.11 oz fresh yeast)
  • 0.09 oz salt
  • 0.09 oz salt
  • 0.09 oz baking soda (or a tablespoon of vinegar)
  • as needed water (a pot)
  • 1 egg yolk
  • 1 tbsp almond milk (or cow’s milk)
  • as needed seeds (of your choice e.g., poppy, sunflower, flax, sesame, pumpkin)

  • 1 Baking Sheet
  • 1 Bowl
  • 1 Milk Frother

Steps

  • Heat the milk with the microwave or with the Aeroccino 3.

    Pour the milk
  • Add the sugar and the oil.

  • Mix until the ingredients are combined.

  • In a bowl, place the flour and yeast, slowly adding the now slightly warm milk.

  • Work with your hands to let the flour absorb the milk, add the salt.

  • Move the dough onto the work surface and knead it until you get a smooth, soft, elastic, and compact dough.
    Form a ball and let it rise in a bowl, covered with plastic wrap in the oven off with the light on until it doubles, about two hours.

  • After two hours, move the dough from the bowl to the work surface and cut it into four pieces.

  • Knead each piece until you get a ball, you should have four balls.

  • Take the ball and with your fingers form a hole in the center about 1.5 inches wide.

  • Place the bagels on a baking sheet lined with parchment paper and cover with plastic wrap, let them rise for another fifteen minutes.
    While proceeding with the first cooking, keep the bagels covered so they don’t get air.

  • Bring a pot of water to a boil, salt, add the tablespoon of vinegar or the teaspoon of baking soda.
    Immerse in the pot, one or two bagels depending on their size.

  • Cook for one minute on each side and proceed the same way for all our bagels, gradually placing them on a baking sheet lined with parchment paper.
    Meanwhile, in a bowl, beat an egg yolk with a tablespoon of milk.

  • Brush each bagel with the emulsion and sprinkle each bagel with your preferred seeds.

  • Preheat the oven to 392°F, place the baking sheet on the lowest rack, and bake for about 10 minutes, then move to the middle rack and bake for another 5 minutes, making sure to visually check the cooking, they should be golden.

  • Bagels are delicious even plain, but you can fill them as you like, with cold cuts and cheese or salmon and cream cheese.
