Whole wheat coffee cookies without butter, an ideal sweet for the whole family’s breakfast.
I made these cookies with the idea of achieving a dessert with low saturated fats and low sugar; I believe I succeeded. Let me know what you think in the comments.
To limit the use of sugar, I ‘exploited’ ingredients like milk and almond flour that are naturally sweet. 😉
I used panela, which is an unrefined whole cane sugar, but in modest quantities. Remember, we should all re-educate our palates to natural tastes.
I also used whole rolled oats because they are an excellent source of fiber, great for improving intestinal function, helping control cholesterol levels, and increasing the feeling of fullness.

Ingredients for Whole Wheat Coffee Cookies without Butter
- 6 1/2 oz rolled oats (blended)
- 2 1/2 oz almond flour
- 2 tbsp unrefined cane sugar (panela)
- 1 cup almond milk
- 1 egg
- 2 tbsp sunflower seed oil
- 1 coffee (long espresso shot)
- 2 tbsp raisins
- 1 1/2 tsp baking powder
Steps
Soak the raisins in a little hot water to rehydrate them.
Coarsely blend the whole rolled oats in a mixer to reduce their size slightly.
Transfer the oats into a bowl, add the almond flour, sugar, egg, coffee (for those with the De Longhi Nespresso Lattissima One coffee machine, use the long coffee function), oil, almond milk (we need a sticky, thick but soft dough), and finally raisins and baking powder.
Form balls and flatten them, arrange on wet and squeezed baking paper, and bake at 350°F for 20 minutes.
Storage
Place in an airtight container and consume within 3/4 days.
