Ingredients for making pumpkin buns
- 7 oz all-purpose flour
- 14 oz Manitoba flour
- 10.5 oz cleaned pumpkin (boiled)
- 1 cup milk (warm)
- 3.5 tbsp extra virgin olive oil
- 2 tbsp brown sugar
- 0.4 oz fresh yeast
- 2 tsp fine salt
- 0.1 oz turmeric (optional)
- as needed milk (for brushing the buns)
- 7 chili peppers (or 7 pretzel sticks)
Tools
- Mixer
- Kitchen Twine
Steps
In a microwave-safe container, place the cleaned pumpkin cut into cubes. Cook for 8 minutes. Once the pumpkin is ready, mash it with a fork and set aside to cool.
Next, pour the previously sifted flour into a large bowl, add the yeast and sugar. Mix and add the warm milk, pumpkin, olive oil, salt, and a pinch of turmeric for extra color (you can skip it!).
Knead until the dough becomes soft, elastic, and no longer sticky to the touch; if necessary, add two more tablespoons of all-purpose flour.
Then, transfer the dough to a bowl, make a cross cut on its surface, cover with plastic wrap, and let rise in a warm place for about 2 hours, until it doubles in volume.
After rising, place the dough on a floured work surface, shaping it into an elongated form. Cut it into pieces weighing about 5.6 oz each. Shape into rounds and tie each piece with twine (best if buttered or oiled), making at least 4 loops and closing with a knot.
Place the buns on a baking sheet lined with parchment paper and let them rise in the turned-off oven with the light on for about 30 minutes.
When the buns have completed the second rise, brush them with milk and bake at 356 °F in static mode for about 30 minutes, or until golden brown.
Once cooled, carefully remove the twine. These pumpkin buns are versatile and perfect for both savory and sweet fillings!
You just have to try them! They are so delicious!
Enjoy your meal!
Storage
Once cooled, store the pumpkin buns in a bread bag, they will stay fresh for 2/3 days.
