Savory Cheesecake with Pesto

The holidays are approaching inexorably, so here’s a recipe for a colorful, quick, and spectacular appetizer.

My savory cheesecake is with pesto because we Genovese put it everywhere 🙂

For the base, I chose crackers that contain 40% less fat than average and then used extra virgin olive oil instead of butter, making the recipe as light as possible.

The ingredients listed will serve for preparing a cheesecake with an 8 cm diameter

  • 1.1 oz crackers (Fiori d'Acqua by Mulino Bianco)
  • 1 tsp spreadable cheese (Philadelphia)
  • 1 tbsp extra virgin olive oil
  • 2 tbsp spreadable cheese (I used Philadelphia)
  • 2 tsp Genovese pesto
  • 1 cherry tomato
  • to taste chopped pistachios

Steps for cheesecake preparation

  • First, weigh the crackers

  • Blend them finely

  • Add a tablespoon of oil and a teaspoon of spreadable cheese in this way it will be easier to compact the base.

  • Place the mixture inside a pastry ring, previously oiled, compacting very well with the spoon, and then transfer the pastry ring into the fridge

  • Mix well two tablespoons of spreadable cheese with two teaspoons of pesto

  • Take the pastry ring out of the fridge and add the filling.

  • Cut a cherry tomato into four, then add some chopped pistachios and serve.

Storage

Refrigerate until serving.
