Summer is getting hotter and my stove stays off.
Today, I prepared the salad with melon, feta, and bruschetta suggested by my greengrocer. It’s very simple and you’ll make it in less than five minutes, just the time to clean the melon.

Ingredients
Here are the ingredients for this colorful and fresh summer salad:
- 3.5 oz mixed salad greens
- 1/2 melon
- 2.6 oz feta
- 1 tsp black pepper
- 1/2 tsp salt (optional)
- 2 slices Tuscan bread (or similar)
- 2.6 oz smoked salmon
- 1.8 oz Parma ham

Steps
The preparation of the salad is really easy, even for a university student; thinking of my daughter 🙂
You just need to dice the melon and feta and add them to the salad, season with oil, pepper, and a pinch of salt.
For the bruschetta, simply toast the bread and add the smoked salmon and Parma ham.
Variations
My bruschettas are really simple, but if you want to enrich them, you can spread the toasted bread with a cheese like Philadelphia and replace the cured meats with cherry tomatoes and black olives. In short, you can get creative with different combinations.
