Ingredients
- 2 cups all-purpose flour
- 2/3 cup water
- 1 tsp salt
- 1 tsp instant yeast

- 8 green onion stalks

Steps
In the bowl, add the flour, yeast, salt, and slowly add the lukewarm water, knead until you get a nice smooth and elastic ball.
Divide the dough into four equal parts and form small balls.
Grease them well both on top and bottom, then cover and let them rest for about 30 minutes.
Chop the green onion stalks, you can also use those of shallots, add 4 tablespoons of flour, pepper, salt, sugar, and season with a tablespoon of oil.
Roll out the first ball and keep the other three covered.
First, flatten the ball with the palm of your hand and then use a rolling pin to form a thin circle. Place the green onion all over the surface of the dough and start rolling, keeping the green onion inside. After obtaining a long roll, form a coil, at this point let it rest for about 10 minutes. Proceed in the same way with the other three balls.
Take the first coil and roll a rolling pin over it, in such a way as to obtain a thin pancake. Cook the pancake in a greased pan, covered for 3 minutes, then flip it to the other side and finish cooking until both sides are golden brown.
