Crepes with Dulce de Leche

Crepes are a dish of French origin, but they are also very popular in Italy. They are thin and soft waffles and above all very good, their taste is neutral, which is why they are suitable for both sweet and savory dishes, from the classic crepes with Nutella to crepes like ricotta and spinach… The batter is simple and quick to prepare. Today I made crepes with dulce de leche, which is nothing more than condensed milk cooked in water… A real temptation… a delicacy…

Ingredients for Crepes with Dulce de Leche

  • 3/4 cup Flour
  • 1 cup Milk
  • 3 Eggs
  • 1 Tablespoon of sugar (optional)
  • Butter as needed
  • 1 Can of condensed milk

Preparation

  • First of all, put the can of condensed milk to boil in a pot of water, cook for about 1.5 hours. Beat the eggs, incorporate the flour, milk, and sugar, stirring well, if with a whisk it is better. The batter must be smooth without lumps, it should not be too liquid nor too thick, if lumps form, blend with water in a blender. Let it rest for 1 hour. After the necessary time has passed, take a crepe pan or a classic skillet, heat it, add a knob of butter and spread it over the entire pan using a piece of paper towel. Take a ladle, fill it with the mixture and pour it into the pan, turning it on itself to distribute well. Cook for about 1 minute and flip the crepe. When all are ready, fill them with the prepared cream.

Notes

Whether you make sweet or savory crepes, there is no need to add sugar or salt, the filling will give the crepes the right flavor. However, if you are too greedy, you can add 1 tablespoon of sugar, as I did.
