Ingredients for soft flatbreads with cherry tomatoes
- 1 1/4 cups all-purpose flour
- 2 cups bread flour
- 1 cup water
- Half packet dry yeast
- 1 tsp honey
- 1 tsp salt (heaped)
- 1 tbsp extra virgin olive oil

Preparation of soft flatbreads with cherry tomatoes
Let’s see how to prepare the flatbreads.
In the bowl of the stand mixer, pour the two flours, dry yeast, and honey. Attach the dough hook and start the mixer, gradually adding room temperature or slightly warm water, then add the oil and finally the salt. Knead the dough for about 10 minutes until it becomes nice and elastic, detaching from the sides and wrapping around the hook. When it’s ready, take the dough, give it 2/3 folds forming a ball that you will place in a greased bowl and cover with a cloth, and let it rise for about 2 hours or at least until it doubles in size. While it is rising, prepare the cherry tomatoes, wash them well, dry them, and cut them into slices.
When the dough has risen, divide it into small balls, the size is up to you depending on the use, for example, for a buffet, I’d make them small like puff pastry pizzettes, while for a snack I’d make them larger, place the balls on a baking tray lined with parchment paper, flatten them a little to form the flatbread and let them rise for another 30 minutes. Once risen, make the classic holes with your fingers, brush generously with extra virgin olive oil, place 4/5 slices of cherry tomatoes on top, pressing a little into the dough, sprinkle with salt and oregano. Bake in a preheated oven and cook at 390°F for about 15/20 minutes or until the desired golden color, check the cooking as it can vary from oven to oven.

The soft flatbreads with cherry tomatoes can be kept for 2/3 days. If you are preparing a buffet, you can make different kinds of flatbreads with the same dough; you can also add olives or make them only with olives, you can make them with thin slices of potatoes or stracchino cheese, in short, with everything you like to have a rich buffet.
