Fried Carnival Lies

Fried Carnival lies are a typical dessert of the Carnival period, with different names and many variants depending on the region.

They are a very crumbly dessert covered in sugar or powdered sugar that melts in your mouth, truly a delight.

Ingredients for Fried Carnival Lies

  • 2 cups flour
  • 2 egg yolks
  • 2 tbsp butter (Room temperature)
  • 1/3 cup sugar
  • 1 packet baking powder
  • 1 small glass grappa (Alternatively, rum)
  • 1 lemon (Grated zest)
  • 1 pinch salt
  • to taste sugar (For garnish)

Preparation of Fried Carnival Lies

  • Let’s see how to prepare the fried carnival lies

    In a bowl, put the sifted flour, sugar, baking powder, and room temperature butter cut into pieces. Start mixing by incorporating the butter into the flour, add the egg yolks and the grappa, the pinch of salt, and the grated lemon zest, preferably organic. Knead well on a work surface until smooth and homogeneous. Does it seem too dry? Add a little white wine, possibly diluted with a bit of water. Form into a ball, cover with transparent food wrap, and place in the fridge for 30 minutes.

  • Take the dough and work it a little to soften it, then divide it into parts and start rolling it out with a rolling pin until it becomes very thin, about a couple of millimeters. If you are not very patient, you can use a pasta machine. Once rolled, cut with a fluted pastry wheel into strips about 4 inches on each side, then make incisions in the center. At this point, start frying. Take a deep pot, fill it with plenty of vegetable oil, heat it over the fire, and when it reaches the desired temperature, immerse the prepared lies and fry until golden, drain on absorbent paper and sprinkle generously with sugar.
