Preparation of Carnival Mask Cookies
Let’s see how to prepare the Carnival mask cookies
In a bowl, pour the sifted flour and work with the softened butter cut into pieces until it becomes sandy. In another bowl, beat the egg with the sugar and add to the flour, grate the zest of 1 lemon, preferably organic, and start kneading until it becomes a smooth and homogeneous dough. Wrap it in cling film and let it rest in the refrigerator for about half an hour.
After half an hour, take the dough, work it a bit, and then roll it out to a thickness of about 1/5 inch and cut out the masks with the cookie cutters. Don’t have the cutters? As I mentioned before, after drawing the masks on cardboard and cutting them out, you need to place them on the shortcrust pastry and cut out the shapes using a sharp pointed knife.
Place the cookies on a baking sheet lined with parchment paper, brush with the egg beaten with sugar on the top of the mask, sprinkle with colored sprinkles, and bake in a preheated oven at 350°F for about ten minutes or until the desired golden color is reached. Be careful with the baking time as they are thin and can burn easily. Once baked, let them cool.
Notes
The cookies keep for 1 week in a closed container. Alternatively, you can prepare them with chocolate. Once cut out, bake them without adding anything on top. After baking, you can cover them with melted chocolate and sprinkle with the colored sprinkles.
