Ingredients for the panettone cake

  • 2 1/2 cups type 1 flour
  • 1/2 cup potato starch
  • 4 eggs
  • 1 cup milk
  • 2/3 cup granulated sugar
  • 1/4 cup seed oil
  • 2 tbsps honey
  • 1 packet baking powder
  • 1 pod vanilla
  • 7 oz sultanas
  • 1/2 cup almonds
  • as needed sugar crystals

Steps for preparing the panettone cake

Soak the dried raisins in hot water for about an hour so that they plump

  • In a bowl, break the eggs, add the sugar and beat with the electric mixer until you get a frothy mixture.

    While keeping the beaters in action, add in order, the honey, then the seed oil and milk in a stream, the sifted flour, potato starch, baking powder, and vanilla pod. Finally, fold in the sultanas, mixing from top to bottom with a spatula.

    Pour the mixture into a panettone mold, level it and decorate with almonds and sugar crystals.

    Bake in a static oven at 356 °F for 30 minutes and then at 338 °F for another 10-15 minutes. Before removing from the oven, do the toothpick test.

    Once cooked, let it cool completely before cutting and serving.

    You can garnish with a spoonful of custard or a scoop of ice cream.

You can also add candied fruits to the panettone cake like orange, lemon, or ginger.

Store it in a food bag or wrapped in plastic wrap to protect it from air.

If you don’t plan to finish it immediately: you can also freeze it. Better to slice it, spread it on a tray, and freeze for a few hours. Then store it in freezer bags. It lasts up to 3 months
