Ingredients for the Orange Cookies without Butter
- 2 cups Type 1 flour
- 1 egg
- 1/4 cup orange juice
- 2 1/2 tbsp extra virgin olive oil
- 1 tsp baking powder
- 2/3 cup erythritol
- 1 orange
- as needed powdered sugar

Steps to Prepare the Orange Cookies
To prepare the orange cookies, take a bowl
Pour the flour and break the egg, and beat with a fork
add the erythritol or 2 tablespoons of honey, and extra virgin olive oil, the juice of a squeezed orange, and continue beating with the fork
Add the grated zest of an orange and the baking powder, and knead with your hands
until you get a compact and smooth dough. Wrap it in plastic wrap and let it rest in the fridge for half an hour
After resting time, divide it into equal portions, about 30 grams each, and shape them into balls with your hands. Roll them in powdered sugar.
Place them spaced apart on a baking sheet lined with parchment paper and bake at 340°F for about 20 minutes in a static oven or 355°F for 15 minutes in a fan oven, 340°F for 10 minutes in an air fryer. Do the toothpick test before removing from the oven.
Once baked, let them cool at room temperature, and the orange cookies with olive oil are ready to be enjoyed!
Storage
The orange cookies with olive oil can be stored in a tin can for three days at room temperature.
