  • 1 puff pastry
  • 3.5 oz speck
  • 1 zucchini
  • to taste soft cheese
  • to taste fine salt

  • 1 Mandoline

Steps for the stuffed pinwheels

To prepare the delicious stuffed pinwheels, start by thoroughly washing the zucchini under running water. Remove the ends and slice them thinly with a mandoline. Grill the slices on a griddle for two to three minutes per side until cooked. Lightly salt

  • Roll out the puff pastry and fill it with a layer of soft cheese.

  • A layer of speck

  • And finish with the grilled zucchini.

  • Gently roll the puff pastry from the long side, tightening well to get a compact cylinder.
    Let it rest in the freezer for about fifteen minutes so that when you cut it, the slices remain intact.

Storage

If you have prepared the rolls or pinwheels but don’t cook them immediately, you can keep them in the refrigerator for about 12-24 hours. It’s important to cover them well with plastic wrap or put them in an airtight container, to prevent the pastry from drying out.

If you want to keep them longer, it is better to freeze them: place them on a tray with parchment paper, side by side, and put them in the freezer until they are solid (1-2 hours), then transfer them to a freezer bag. This way, they last several weeks without losing too much quality.

Once cooked and completely cooled, you can store them in the refrigerator in an airtight container or wrapped in plastic/aluminum foil: they last about 2-3 days.

If you want to keep them longer, you can freeze them once cooked, after letting them cool well, in a container or freezer bag. When you want to eat them, defrost and heat them for a few minutes in the oven or air fryer to make them crispy again.
