Ingredients for Pasta with Ricotta and Swiss Chard
- 11 oz pasta
- 1 bunch Swiss chard (preferably with fine ribs)
- 7 oz sheep's ricotta (or cow's milk ricotta)
- 2 tbsps extra virgin olive oil
- to taste salt
- to taste nutmeg
- to taste grated Parmesan

Preparation of Pasta with Ricotta and Swiss Chard
Let’s see how to prepare pasta with ricotta.
First, clean the Swiss chard, wash it well, put it in a pot with a little water, and blanch it. Once it wilts, remove it and drain it. When it is drained, chop it finely. In a pan, put 2 tablespoons of olive oil and a clove of garlic and let it brown. After a few seconds, add the Swiss chard and let it cook for 5 minutes. Add a pinch of salt, a bit of nutmeg, and the ricotta. Mix well with a wooden spoon until the ricotta becomes creamy, remove the garlic. Meanwhile, prepare the pasta; when it is ready, add the pasta to the pan with the Swiss chard and ricotta and sauté for a few minutes. Serve with grated Parmesan.

If leftovers remain, store the pasta in the refrigerator in a closed container. You can prepare the sauce well in advance to have it ready at lunch or dinner time; just heat it for a few minutes.
