Linguine with Lemon and Almonds, Summer Freshness

Ingredients

  • 14 oz linguine
  • 2 organic lemons
  • 3/4 cup almonds
  • 20 leaves basil
  • coarse salt
  • pepper
  • extra virgin olive oil

Steps

  • Put the water on the stove and in the meantime prepare the sauce. In a very hot pan, toast the almonds to release their essential oils. In the blender cup, pour the juice of two lemons, toasted almonds, coarse salt, and extra virgin olive oil. Add the basil leaves and blend until creamy. Meanwhile, add the linguine to boiling water and cook them. Chop some almonds and a few basil leaves with a knife and set them aside. When the pasta is cooked, place it in a bowl with a little cooking water, add the pesto obtained, and mix quickly. Optionally, add a sprinkle of pepper and serve on plates. Decorate with the chopped basil and almonds and serve.
