- 1/2 cup Sugar
- 1/2 cup Butter at room temperature
- 2 Eggs
- 2 tablespoons Gluten-free cornstarch
- 2 1/4 cups Grated coconut (unsweetened) (gluten-free)
- 1 tablespoon Baking powder (gluten-free)

Preparation of Gluten-Free Coconut Cookies
Let’s see how to prepare the coconut cookies.
In a bowl, beat the sugar with the egg yolks until it is nice and frothy. You can use an electric whisk if you have one. Add the softened butter and mix well, then add the sifted cornstarch with the baking powder, and continue to mix, adding the grated coconut and lemon zest.
When the dough is ready, form balls with your hands and place them on a baking tray lined with parchment paper. Bake in a preheated oven and cook at 340°F for about 10/12 minutes. The cookies are delicious as they are, but you can make them even more indulgent by dusting them with powdered sugar or dipping them in dark chocolate.
Notes
Place them apart on the tray as you see in the photo, they tend to stick together but can be easily separated, otherwise you can also put them in muffin cups.
