Ingredients for Beetroot and Stracchino Risotto

  • 1.4 cups Carnaroli rice
  • 1 leek
  • 3 red beetroots, cooked
  • to taste vegetable stock
  • Half cup white wine
  • 3.5 oz stracchino
  • to taste extra virgin olive oil
  • to taste salt
  • 1 knob of butter

Preparation

    The recipe is simple to prepare:

    First of all, prepare the vegetable stock in a tall pot, you can comfortably use the vegetables you have at home. Take the cooked beetroot, cut it into pieces, and set it aside.

    Meanwhile, cut the leek and sauté in a large saucepan with a little oil. At this point, add the rice to the leek and toast it, then deglaze with white wine, letting it evaporate, stirring with a wooden spoon, being careful not to let the rice stick.

    Start adding the stock little by little, stirring until the rice is cooked, 5 minutes before it’s done, add the chopped beetroot and finish cooking. Finally, add the butter and mix well, plate the risotto and serve with some tablespoons of stracchino. You can also add parmesan.

If you want an even tastier risotto, you can also add a bit of gorgonzola. If there are leftovers, store in the fridge in a closed container for a maximum of 2 days, just heat it with a spoonful of broth.
