Preparation of Rectangular Puff Pastry Cookies
Let’s see how to prepare puff pastry cookies.
Open the rolls of puff pastry, leave one with its parchment paper and remove the other one to place it on top of the one with parchment paper. Gently press with your fingertips to adhere them together. Use a pastry wheel to cut the dough into strips about 4 inches long, sprinkle sugar evenly over the entire puff pastry, add as much as needed to make it even. Press lightly with your fingers or a rolling pin. Use the wheel to cut the cookies in the other direction, about 0.8 inches wide, make 3 diagonal incisions in the center, bake in a preheated oven and cook at 356°F for about 10-12 minutes or until desired golden brown, I prefer them not too dark.
Notes
Puff pastry cookies can be stored for about 5 days in a sealed container. You can also make them more indulgent by simply dipping one side in melted dark chocolate.
