Sautéed Lettuce with Bacon and Parmesan

Lettuce has often been the star of my table these days, and besides being eaten raw, simply dressed with excellent extra virgin olive oil, or cooked with fresh organic eggs, we can also turn it into a great dish. In fact, by adding bacon, we give it a touch of savoriness and the richness that makes the dish delightful. A sprinkle of Parmesan completes this tasty dish.

Ingredients

  • 1 head lettuce
  • 3.5 oz rolled bacon
  • oz grated Parmesan cheese
  • 1/2 white onion
  • 3.5 oz butter
  • salt and pepper

Steps

  • To start, wash the lettuce under running water and place it in a large pot, add cold water and put it on the heat to warm up. As soon as it boils, turn off the heat and drain the lettuce from the water, place it in a colander to let it lose excess water.

    In a wide pan or a shallow large pot, melt the butter and add the chopped onion. When the onion has softened, add the bacon after cutting it into cubes. Sauté for a few minutes and then add the roughly chopped lettuce. At this point, stir the lettuce with a wooden spoon to cook it well; if it’s too dry, we can add a ladle of the lettuce cooking water that we kept aside. Adjust with salt and pepper, taste to see when the lettuce is cooked, on average 15 minutes should be enough.

    Serve hot with some crusty country bread!
