Ingredients for Air Fryer Gratin Zucchini
- 1.1 lbs zucchini
- 1.5 tbsp extra virgin olive oil
- 1.4 oz grated parmesan cheese
- to taste fine salt

Steps for Air Fryer Zucchini
To prepare the delicious air fryer zucchini, start by choosing firm and, if possible, organic zucchini.
Rinse the zucchini under running water, pat them dry with paper towels, and slice them into rounds.
Heat a non-stick pan with a drizzle of oil and cook the zucchini for 7-8 minutes over medium heat, salt, and stir often, until they start to soften but don’t become mushy. This helps to remove excess water, resulting in better crispiness in the air fryer, and helps to even out the cooking.
Transfer the zucchini to the basket of the air fryer lined with parchment paper, and sprinkle them with grated parmesan cheese and mix so they are well coated.
Preheat the air fryer to 392°F (200°C) for 2 minutes and cook for 3-4 minutes, turning them halfway through, until the parmesan is golden and forms a crispy crust.
Serve hot to enjoy them crispy and… enjoy your meal!
Storage
Let them cool completely. Transfer them to an airtight container and store in the fridge for up to two days.
To serve them crispy again, reheat in the air fryer at 356°F (180°C) for 2-3 minutes (not too long, otherwise they become dry).
I do not recommend freezing them already seasoned with parmesan.
If you want, you can freeze them without it.
