Start by peeling the apples. Remove the core, cut them in half, and slice them thinly with a mandoline. Place them in a bowl and drizzle with the juice of a lemon to prevent oxidation.
Meanwhile, break the eggs into a bowl, add the sugar, and whisk with an electric whisk or a hand whisk until you get a frothy mixture.
Gradually, and while whisking, pour the plant-based milk, I used oat milk, the vegetable oil, cinnamon, flour with baking powder and mix everything until you get a homogeneous mixture.
At this point, incorporate the apples and mix, from top to bottom, until they are well incorporated into the batter.
Line an 8-inch cake pan with parchment paper, level it and cook the apple pie in the air fryer at 340°F for about 16-17 minutes. Check the cooking in the last minutes as each air fryer cooks slightly differently. Do the toothpick test, and if it comes out clean, the apple pie is ready to be enjoyed. You can also bake in a static oven at 355°F for 20-25 minutes.
Enjoy from Barbara!
