Two cups of strong espresso in the batter and some walnuts give the cake a truly energetic boost to face the day with tranquility. - 2 cups all-purpose flour
- 4 eggs
- 1 1/4 cups sugar
- 3/4 cup vegetable oil
- 2 espresso cups strong espresso
- 1 plain yogurt
- 1 packet baking powder
- 1 cup shelled walnuts
Steps
In a bowl, beat the eggs with the sugar until the mixture becomes frothy and light. Add the yogurt, coffee, vanilla essence, and oil. Continue mixing the ingredients, and once the batter is smooth, add the sifted flour and baking powder. Continue to blend everything with the whisk.
Once the mixture is homogeneous, take the walnuts and chop them in a blender, leaving them slightly coarse. Add them to the batter and incorporate them evenly with a spoon. Take the pound cake mold, grease it, flour it, and pour in the batter. Now, bake in the oven at 340°F for 40 minutes. Always perform the toothpick test before removing it from the oven.
