The scallops with speck and cheese are a quick and very tasty second course. The recipe involves flouring the meat, cooking it in a pan, towards the end of cooking you add speck and cheese, they are really tasty, I find them perfect even if we have guests for dinner.
Very summery, I also recommend the scallops with rocket and cherry tomatoes or the traditional creamy scallops with mushrooms. You can accompany them with easy and quick roasted peppers or if you prefer a quicker recipe make the marinated zucchini.
