Ingredients for the Preparation of the Carrot Roll

  • 1.1 lbs carrots
  • 3 eggs
  • to taste fine salt
  • 1 oz grated Parmesan
  • 0.66 cups julienne mozzarella
  • 4.2 oz cooked ham

Steps for the Preparation of the Carrot Roll

To prepare the delicious stuffed roll WATCH THE RECIPE VIDEO start by peeling the carrots with a peeler and wash them under running water.

Pat them dry with paper towels and grate them with the grater.

Put them in a bowl, season with salt and add the eggs and grated Parmesan. Mix until the ingredients are perfectly combined.

Line a rectangular baking pan 10.23 x 13.38 with parchment paper and pour the mixture.

Level it with a spatula and bake at 356°F for about 20 minutes, until the surface is firm.

Once cooked, let it cool slightly and remove the parchment paper.

Fill with slices of cooked ham and julienne mozzarella and roll it up from the shorter side, initially helping with the parchment paper. Do not roll too tightly.

Bake for another 5 minutes at 338°F or until the cheese melts.

Remove from the oven and slice it hot to achieve the gooey and creamy effect.

  • Cook in air fryer mode at 338°F for about 12 minutes. Check the last few minutes, every air fryer has slightly different cooking times.

    If it has a small basket, halve the doses.

Storage and Tips

Wrap the vegetable roll in plastic wrap or leave it closed in parchment paper. It keeps well for 2 days in the refrigerator.

You can freeze it already sliced, separating the slices with parchment paper and then putting them in an airtight container. This way they won’t stick.
Lasts up to 1 month in the freezer. To consume, just let it thaw in the fridge and reheat for a few minutes in the oven or air fryer.
