Baked Breaded Meatballs are a lighter version compared to the classic ones because they are not fried but baked in the oven. On this occasion, since I had the oven on, I paired them with breadcrumb-coated artichokes, as I find it a perfect combination: the artichokes are crispy, and the meatballs are tender.

Ingredients
- 1.32 lbs ground beef and pork
- 2.12 oz breadcrumbs
- 3.53 oz grated Parmesan cheese
- 2 eggs
- 2 tbsp milk
- 1 clove garlic
- 2 tbsp extra virgin olive oil
- 1 glass half water and half red or white wine
- as needed breadcrumbs for coating
- 1 grated lemon zest
- to taste salt and pepper

Preparation
First of all, organize your workspace with all the ingredients already measured, so everything is at hand.
In a large bowl, place the ground meat, breadcrumbs, eggs, grated Parmesan cheese, finely chopped garlic, grated lemon zest, and finally add salt and pepper, mixing well to combine the ingredients.
Prepare a plate with breadcrumbs, form balls with the seasoned ground meat, roll them in the breadcrumbs, and place them in the prepared baking dish.
Drizzle with extra virgin olive oil and bake in the oven, but preheated at 356°F, because if it’s cold, they would boil and risk hardening.
After about 5 minutes, when they have browned, add the glass of hot water and wine, because otherwise, you would lower the temperature of the meatballs too much.
Let them cook for about 15 more minutes, but the necessary time depends on the size of the meatballs; obviously, the larger they are, the longer the cooking time.
Serve your Baked Breaded Meatballs either piping hot or at room temperature, garnished with chopped fresh parsley if you like.
Tip: For extra flavor, mix the ground meat a few hours in advance, allowing it to rest and absorb the flavors.
