Very easy to prepare, and also quick, if your trusted fishmonger cleans it and cuts it into pieces…the oven will then help you a lot, because once seasoned, the cooking will be up to it. If you have time constraints, and want to get a head start, then you can boil it the day before and then put it in the oven at the last moment. But in this case, be careful with the potatoes, cut them into small pieces, otherwise they won’t cook enough.

  • 2.6 lbs octopus
  • 1.8 lbs potatoes
  • 2 cloves garlic
  • 2 sprigs rosemary
  • 4 tablespoons extra virgin olive oil

How to Prepare Baked Octopus with Potatoes and Rosemary

  • To prepare Baked Octopus with Potatoes and Rosemary, organize your workspace with all ingredients pre-measured, so everything is at hand.

    If you like, slice the potatoes without peeling them, but only after washing them, or remove the skin without problems.

    Cut them into pieces, and place them directly in the baking dish, making sure it is large enough to hold all the ingredients.

    Add the octopus, chopped garlic, rosemary sprigs, as well as salt, pepper, and extra virgin olive oil.

    Mix everything well, and bake in a preheated oven at 356°F, allowing it to cook for about 1 hour.

    After this time, check with a fork that the octopus has softened and, more importantly, that the potatoes have become golden.

    Turn off and serve your Baked Octopus with Potatoes and Rosemary hot.

Tips and Variations:

If any is left over, Baked Octopus keeps very well for one or two days in the refrigerator.

Don’t like eating the same dish again? No problem, chop it and make meatballs out of it.

Sometimes, when I have more time, I boil the octopus first, with a large onion, to tenderize it as much as possible…in any case, even if a bit tough, octopus is always delicious.
