The Gratin Skewers of Shrimp and Squid aren’t difficult to prepare, especially for those using frozen products, but make sure it’s a quality product. Otherwise, rely on your trusted fishmonger, who will surely clean all the fish you want, and at this point, you can prepare as many skewers as you want and freeze them, ready to be used on other occasions.

Ingredients
- 16 Jumbo shrimp
- 4 squid
- 1 clove Garlic
- 4 tablespoons Breadcrumbs
- 3 tablespoons Extra virgin olive oil
- 1 bunch Parsley
- to taste Salt
Preparation
Take the jumbo shrimp, remove the head, shell, and intestines (the black vein you will find on the back).
Rinse them well, dry off the excess water, and place them on a plate.
Surely, the squid you bought will have already been cleaned by your fishmonger, so you just need to cut them into 3 pieces each.
In a bowl, add the chopped garlic, breadcrumbs, salt, extra virgin olive oil, and finely chopped bunch of parsley.
Mix well, then add the jumbo shrimp and squid to the mixture.
Mix everything well and let it rest, for the time it takes to heat the oven: 392°F, convection mode.
Take the skewers, and start assembling your skewers, starting with the squid.
Line the baking tray with parchment paper, and lay the skewers on top, but if necessary, drizzle them with a little oil.
Bake, lower the temperature to 356°F, and cook for about 15/20 minutes, or until you see them brown.
Serve your Gratin Skewers of Shrimp and Squid with lemon wedges.
