Ingredients for Quick White Focaccia with Rosemary
- 3 1/3 cups all-purpose flour
- 1 1/8 cups water
- 2 tablespoons extra virgin olive oil
- 1 packet instant yeast for savory recipes
- 1 teaspoon fine salt
- 1 1/2 tablespoons extra virgin olive oil
- 2 teaspoons water
- as needed coarse salt
- as needed rosemary (fresh or dried or a mix of both)

Preparation of Quick White Focaccia
In a bowl, pour the flour, yeast, and salt and mix.
Then add the water and oil, and with the help of a spoon start mixing, and when the dough comes together, turn it out onto the pastry board (flour it if needed), knead it for 4/5 minutes, you’ll get a smooth and homogeneous dough.
Oil the nonstick baking pan, put the dough inside and spread it with your hands until the whole pan is filled, it is an elastic dough that works very well with your hands, no rolling pin needed.
Preheat the oven to 392°F (200°C), in the meantime prepare an emulsion in a small bowl with water and oil, and brush it over the focaccia, add coarse salt and rosemary, and when the oven is hot, bake it, cook for 35/40 minutes, always check after 25/30 minutes (because every oven is different), once cooked, the focaccia should be slightly golden on the surface.

Tips
If you have leftover focaccia and want to freeze it, you can do so. Simply cut it into wedges and separate them with parchment paper between each piece, then place in a freezer bag and freeze, you’ll always have a ready supply! When you want to eat it, take it out the night before and once thawed, just heat it for a few minutes in the oven and it will be like freshly made!
If the focaccia darkens too much on the surface towards the end of baking, cover it with a sheet of parchment paper and finish baking.
