Golden Fried Fresh Anchovies

Golden Fried Fresh Anchovies are a dish that can be served as a main course or as an appetizer/snack, depending on the portion size. I find them excellent, but many, like my husband, do not like them because they find the small bones really annoying. So if you also have this problem, I suggest you buy the larger ones and have them deboned. Although I cook them whenever I can find them of this size at the fish market, these were not cooked by me, but by a seaside restaurant… because I’m on vacation these days.

Golden Fried Fresh Anchovies

Ingredients

  • 1.76 lbs fresh anchovies
  • 1 qt plenty of peanut oil
  • as needed flour
  • as needed salt
  • as needed lemon

Tools

  • Frying pan
  • Plate
  • Paper towel
  • Tray

Preparation

  • Wash the anchovies very well, let them drain to remove as much water as possible, but also pat them dry with paper towels.

    In the meantime, bring the peanut oil to a boil in a deep frying pan.

    Dredge the anchovies in flour, dip them into the hot oil so that it immediately seals all the fibers of the fish.

    Cook them for a few minutes, just until they turn golden, as the fish is small and doesn’t need much cooking.

    Let them drain on paper towels, then place them on a tray or in a serving dish.

    Serve your Golden Fried Fresh Anchovies, sprinkling them with salt and decorating with lemon wedges.
