Ingredients
Ingredients for a 1.43 lbs veal roast
- 1.43 lbs veal roast
- to taste soffritto (or 1 carrot, 1 onion, 1 stalk of celery)
- 2 tbsp butter
- 1/4 cup white wine
- 1 cup cup orange juice
- of extra virgin olive oil
- A few leaves bay leaves
- A few leaves sage
- to taste salt and pepper

Steps
Preparation of the Orange Roast
Chop the onion, celery, and carrot or use ready-made soffritto for convenience
Cooking:
Multicooker: let the soffritto soften in the tray with a drizzle of oil and the butter program sear/sauté temperature HI5 (open lid function)
Pan: over low heat, let the soffritto soften with a drizzle of oil and the butter
In multicooker: once the soffritto is ready, seal the meat on all sides
In pan: when the soffritto is ready, seal the meat on all sides
Multicooker: always temperature HI5
Multicooker: add the sage and bay leaves
Pan: add the sage and bay leaves
In multicooker: Refine with white wine, keeping the temperature at HI 5, until the alcohol part is completely evaporated and add the filtered orange juice
In pan: also refine with white wine, over high heat, until the alcohol part is completely evaporated and transfer the meat to a tray with the filtered orange juice
Transfer the roast to the air fryer and cook at 356°F for 30 minutes, basting and turning the roast from time to time. You can use the bake or air fry program
Check the cooking by pricking the meat with a toothpick or the prongs of a fork: if the liquid that comes out is clear, the meat is ready; if the liquid is pink, it indicates medium cooking; red instead means it is still raw and needs more cooking, so in this last case, continue for a few more minutes, not too long to avoid tough and dry meat. Anyway, if it should seem too pink when you cut it, don’t worry, when you heat it, it will complete cooking
Wrap the freshly baked roast in aluminum foil, so the juices are distributed and will remain inside, keeping the meat soft. Let it cool first at room temperature and then in the fridge; this way, the slices will cut perfectly
Meanwhile, prepare the orange sauce: just put the cooking juices, remove the sage and bay leaves, into a jug and blend it with the hand blender

Storage, Tips, and Variations
You can store Orange Roast in the fridge for 2/3 days in an airtight container.
It is possible to freeze it and portion it for a duration of 2 months: slice it and wrap each slice in plastic wrap, placing them in freezer bags or a container. Defrost it in the fridge and heat it in the air fryer or oven at 320-338°F for a few minutes
For this recipe, you can replace veal roast with pork roast
Cooking in Oven or Pan
It is possible to cook the orange roast either in the oven or in a pan
In oven preheated at 338-356°F for 45-50 minutes depending on the weight of the meat. The steps are the same as for cooking in the air fryer
In pan once refined with wine, add the filtered orange juice, cover, and continue cooking for about 1 hour (always depending on the weight of the meat), basting and turning it during cooking and keeping the heat low
