Ingredients

  • 2/3 cup milk
  • 2/3 cup water
  • 3.5 oz raisins
  • 13.5 oz chestnut flour
  • 1/3 cup all-purpose flour
  • 1/4 cup sugar
  • 2 tbsp extra virgin olive oil

Steps

  • Start by soaking the raisins in a bowl of warm water for about 10 minutes, until they are soft. Drain and dry them with paper towels.
    In a large bowl, pour the milk and water. Add the extra virgin olive oil and mix well.
    Sift the chestnut flour and the all-purpose flour directly into the bowl with the liquids. Add the sugar and mix with a wooden spoon or spatula until you get a homogeneous mixture. If the dough is too sticky, add a bit of all-purpose flour (about 2 tbsp).
    Add the raisins, and gently mix the dough.
    Scoop a tablespoon of dough at a time and form balls, flatten them slightly and place them on a baking sheet lined with parchment paper, spacing them slightly.
    Decorate with chocolate chips and chopped almonds
    Bake in a preheated oven at 355°F for about 20-25 minutes.
