The Cabbage Rolls with Annurca Apples are a truly tasty dish, and typically autumnal. The Annurca apple is considered “the queen of apples” for its nutritional and organoleptic properties. Not surprisingly, it has also obtained the IGP designation. Typically Italian, it is the only apple native to the south, specifically from Campania. Of small to medium size, it was the Romans who first named it: orcula, because it came from the Orco area. Later it was called annorcola, and then annurca.

Ingredients
- 20 leaves of cabbage
- 14 oz mixed ground beef and pork
- 8 tablespoons grated Parmesan cheese
- 2 tablespoons breadcrumbs
- 1.8 oz raisins
- 0.7 oz pine nuts
- 1 whole egg
- to taste Salt
- 6 Annurca apples
Preparation
First of all, bring a pot of water to a boil.
Once boiling, you should add the cabbage leaves, one at a time, in several batches.
The cabbage should only be blanched for a few minutes, just enough to wrap it around the meat without breaking.
Drain it and let it cool.
Meanwhile, soak 1.8 oz of raisins in a glass of warm water.
In a bowl, mix all the ground meat, Parmesan cheese, breadcrumbs, whole egg, pine nuts, and salt.
Mix everything very well and let it rest.
Carefully trim the hard white part from the leaves without damaging them.
Add the raisins to your mixture and mix well.
Preheat the oven to its maximum temperature.
Now start shaping your rolls: place a portion of your mixture in the center of each leaf, roll it up, and secure with a toothpick.
Continue until you have used up all your cabbage leaves.
If you have leftover filling, shape it into small meatballs.
Wash the Annurca apples, dry them, and cut them into 4 parts.
Place them in a bowl and season with salt and oil.
In a baking dish, spread a layer of oil, then add the rolls and also the Annurca apples.
Place everything in the oven and bring the temperature to 356°F.
After about 20 minutes, add beer at room temperature and cook for another 20/30 minutes.
If the liquid dries too much, add more beer: the dish should be juicy.
Plate your Cabbage Rolls with Annurca Apples, decorating them with the apples and the cooking sauce.
