Potato and Beet Hearts are a quick and impressive side dish idea, perfect for Valentine’s Day. The ingredients are very few, but the result is excellent. You can plate them as in the photo or just use them as decoration around a main dish.

Ingredients
- 2 Large potatoes
- 2 Large beets
- 1 clove Garlic
- to taste Salt and pepper
- to taste Extra virgin olive oil
- 1 tbsp Balsamic vinegar glaze
Preparation
Boil the beets for about 40 minutes, then set aside to cool.
Peel the potatoes, slice them into 1/4 inch thick slices, and use a cutter to shape them into hearts.
Do the same with the boiled beets.
Put 2 tablespoons of extra virgin olive oil in a non-stick pan, brown the halved garlic and the potato hearts.
Season with salt and pepper, and when the potatoes are cooked and crispy, remove from the heat and set aside.
In the same pan, add the beet hearts, and keeping the heat high, sprinkle with salt and pepper.
Towards the end of cooking, when they are also crispy, add a tablespoon of balsamic vinegar glaze, and cook for a few more minutes.
At this point, plate them together or separately, as you prefer.
