Air Fryer Ratatouille

I’m still amazed at how such simple dishes can surprise with their goodness. In this recipe, I prepared a very simple air fryer ratatouille, a French vegetable stew that is tasty, light, and colorful—a perfect side dish, especially in the summer, and with this cooking method, it becomes very quick. I chose zucchini, tomatoes, red onion, and peppers as vegetables, sticking more to the original version without adding many spices, just garlic powder, oil, and salt. As a personal variation, I added capers to give it a more rustic flavor. Our Italian version includes caponata, peperonata, ciambotta, etc. You can change and choose the vegetables you like the most or season it with other spices. There’s not much else to say, so try it and taste it!

  • 1 yellow or red bell pepper
  • 10 cherry tomatoes
  • 3 medium zucchinis
  • 1 Tropea red onion
  • 1 tablespoon pickled capers

Steps

  • First, wash and clean the vegetables, then cut the pepper and zucchinis into strips, and the onion and tomato into rings.

  • Take the vegetables and place them in a container or directly in the baking pan, seasoning them with the listed ingredients. Mix well. Place the pan in the air fryer basket, set it to 356°F (180°C) for about 25 minutes, turning the vegetables every 10 minutes.
    Your air fryer ratatouille is ready!!

Storage

You can store the ratatouille in the refrigerator for up to 2 days.
