Ingredients
- 2 eggplants
- 3/4 cup breadcrumbs

Steps
Wash the eggplants, trim them, and slice them to a thickness of about 1/4 inch.
In a container, place the breadcrumbs and season it with turmeric, garlic powder, and salt.
Bread the eggplant slices, pressing lightly so the breadcrumbs adhere well.
Continue with all slices and set them aside.
Take the air fryer basket and place the container inside. Add a drizzle of oil to the base, then place the eggplant slices side by side and add a drizzle of oil.
Set the air fryer to 356°F for 30 minutes, turning them halfway through cooking.
Your gratinated eggplants in the air fryer are ready!!
Storage
You can store the gratinated eggplants covered with plastic wrap until the next day at room temperature or for two days in the refrigerator.
