The oatmeal cookies with hazelnuts and chocolate are really excellent and light. Very simple treats to prepare with very few ingredients, perfect for an energetic breakfast. I rarely use oat flour, mostly for making pancakes, but this time I wanted to try a different recipe; the scent of hazelnuts is extraordinary together with the benefits of this flour rich in proteins, vitamins, potassium, and zinc. It can be used for both sweet preparations, primarily dry products like cookies, and savory preparations like bread, pizzas, savory pies, etc. So you just have to try them right away!!

Ingredients
- 1 1/2 cups oat flour
- 1 cup chopped hazelnuts
- 1/2 cup brown sugar
- 2 1/2 tsp baking powder
- 3 1/2 tbsp clarified butter (softened)
- 1 egg
- 1/2 cup chocolate chips

Steps
In the mixer or a bowl, put the egg, sugar, and softened butter, but not too much. Mix to combine the ingredients.
Chop the hazelnuts and chocolate if you don’t have them already chopped.
Add the flour, hazelnuts, and chocolate, and in a few minutes, the dough will come together.
Form balls of 20/25g (0.7/0.9 oz), decide the size, line the baking tray with parchment paper, and place the balls a bit apart. Bake in a preheated fan oven at 356°F for about 18 minutes.
Your oatmeal cookies with hazelnuts and chocolate are ready!!
Variation
If you prefer, you can replace the hazelnuts with almonds or omit the chocolate chips.
Storage
You can store the cookies in a closed container for 3/4 days.
