The mushroom lasagna is a classic dish for holidays or Sunday lunch. A preparation that almost everyone likes, delicate and creamy, an alternative to the classic meat sauce lasagna. The recipe is very simple to make, just prepare some béchamel sauce and the mushrooms. I used king trumpet mushrooms and dried porcini mushrooms, the aroma is amazing, but you can use champignon mushrooms, mixed fresh or frozen, they will still be excellent. In the white version, some add meat, but this way it can also be enjoyed by vegetarians. Now it’s time to try it!

Ingredients
- 2 packages egg lasagna sheets
- 1 quart béchamel sauce
- 1.75 lbs king trumpet mushrooms
- 3.5 oz dried porcini mushrooms
- 1 clove garlic
- 8.75 oz mozzarella
- 1 tsp bouillon cube
- grated Parmesan cheese to taste
- olive oil
- salt
- pepper

Steps
First, soak the porcini mushrooms. Clean and cut the king trumpet mushrooms into not too large pieces.
In the pan, put just enough olive oil to cover the bottom and the garlic, let it sauté for a few minutes, then add the mushrooms (chop the porcini as well).
Remove the garlic, add the bouillon cube and pepper. Cover and let cook for about 25 minutes, stirring occasionally and adding a bit of water if needed to prevent them from drying out too much.
At the end of cooking, taste and adjust with salt.
Prepare the béchamel sauce by following the link. Then start assembling the lasagna.
Place a bit of béchamel sauce and grated Parmesan cheese at the bottom of the baking pan, then lay down the first sheets of lasagna without overlapping them, add more béchamel, some mushrooms, mozzarella, and Parmesan. Then continue with other sheets in the opposite direction and proceed again with béchamel, mushrooms, mozzarella, and Parmesan. Continue until you have at least 4 layers. Finish with béchamel, mushrooms, and Parmesan.
Storage
You can store the lasagna in the refrigerator for one day; for longer periods, it is preferable to freeze it.
