Ingredients for the Strawberry Cookies
- 2 1/4 cups all-purpose flour
- 7 tbsps butter
- 1/3 cup coconut flour
- 1/3 cup sugar
- 2 tbsps milk
- 1/2 packet baking powder
- 1 packet vanillin
- 1/2 lemon zest
- 1 1/4 cups strawberries
- as needed powdered sugar

Preparation of the Strawberry Cookies
First, wash the strawberries by soaking them in water and baking soda for about 20 minutes, then rinse, remove the crown, dry them and cut them into small pieces.
In a bowl, place the sugar and butter, removed from the fridge a few hours in advance to soften. Add the peel of an organic lemon.
Work with the electric mixer until it turns into a cream. Now add the coconut, egg, and vanillin and continue mixing.
Gradually incorporate the flour and baking powder, and finally, add the milk. Knead until you obtain a homogeneous mixture.
Add the strawberries, incorporating them little by little with a fork. The mixture, initially firmer, will begin to soften due to the juice released by the fruits.
Using two tablespoons, create small heaps on a baking sheet lined with parchment paper and bake in a preheated oven at 340°F (170°C) for about 25 minutes.
Once baked, let the cookies cool completely, then sprinkle them with powdered sugar and arrange them on a tray.
