For the preparation of scaloppine, pork or beef can be used, but I prefer chicken breast, lighter and more delicate. Steps
To prepare the scaloppine, you will need thinly sliced chicken breast. Prepare some flour on a plate and coat the chicken breast well.
In the pan, add butter and a drizzle of oil, heat on low and melt the butter.
When melted and starting to fry, add the chicken slices.
Slightly increase the heat and sear for a few minutes first on one side and then the other.
Then add the lemon juice, let it thicken for a few minutes and turn off the heat.
Before serving, add some parsley. Enjoy it hot.
