Rolls with Cremini Mushrooms

The rolls with cremini mushrooms are a tasty and succulent meat main course perfect for soaking up with that delicious, flavorful, and fragrant creamy sauce.

The rolls with cremini mushrooms are made with very thinly cut veal slices, filled with a meatball mixture.

They are lightly floured and deglazed with white wine, then sliced mushrooms are added, creating an enveloping creaminess that will make your mouth water!

I used cultivated cremini mushrooms, but it’s clear that with any wild mushrooms, they are even tastier.

Rolls with Cremini Mushrooms

Ingredients

  • 10 slices of very thinly cut veal
  • 10.6 oz of ground veal
  • 1.4 oz of bread crumbs
  • 1.4 oz of grated Grana cheese
  • 1 egg
  • 10.6 oz of cremini mushrooms
  • 1 glass of white wine
  • 0.88 oz of butter
  • to taste of salt
  • to taste of garlic
  • to taste of parsley
  • to taste of flour
  • to taste of EVO oil

Steps

  • Clean, wash, dry, and thinly slice the cremini mushrooms.

  • Prepare the filling mixture.
    In a bowl, combine the ground veal, breadcrumbs, grated Grana cheese, parsley, and the egg.

  • Add salt and garlic powder, then mix.

  • As I already mentioned, I recommend slices that are only a few millimeters thick.
    Season each slice with a pinch of salt and add a bit of the mixture inside.

  • Roll up and secure the edges with toothpicks.
    Coat the rolls in flour.

  • In a pan, heat some oil and butter over low heat.
    Place the rolls and let them brown gently on both sides.

  • Pour a glass of white wine and let it evaporate.
    Once the wine has evaporated, add the mushrooms, adjust the salt, and let them cook for 15-20 minutes.
    The mushrooms will release water, but if needed, add a little warm water. The final result should not be dry but rather with a sauce.

The rolls with cremini mushrooms can be prepared and frozen raw, a strategic idea for those who work a lot and have little time but don’t want to give up pampering their family.
