What can I say, these pineapple and cheese skewers with green olives and pickled peppers are out of this world. End of story, I have nothing else to add!! 😄
I was skeptical. Not to mention my husband, who refuses to taste anything at the mere mention of pineapple in savory recipes. 😂
But this week’s Light and Tasty recipe was looming, and… well, what can I do if the topic decider 😎🤭 chose pineapple for today? Come on, just a taste, do me this favor just to tell me what you think, please!
How do you think it went?
It went so well that these pineapple and cheese skewers are delicious! 🥳 One leads to another, to be eaten in one bite, all four ingredients together.
It’s a fresh, appetizing finger food, great accompaniment to appetizers or sparkling drinks, that really surprised us.
We devoured all the test skewers. And then I made more, and we finished those too! Oh yeah!

Ingredients
- pineapple
- string cheese
- green olives
- pickled sweet and sour peppers
Tools
- Skewers
- Cutting Board

Steps
Peel the pineapple, slice it, and cut the slices into pieces.
Cut the cheese into pieces (more or less the same size as the pineapple cubes).
👉 I used a string cheese like Galbanino, but a mild provolone or caciotta would also be fine.
Cut the green olives in half.
Cut the pickled sweet and sour pepper pieces into squares.
Assemble the skewers by alternating pineapple, cheese, pepper, and olives as desired.
👉 In our opinion, half an olive is the right amount (a whole one overpowers the other flavors).
👉 The peppers I used are pickled in sweet and sour sauce, which really pairs well with this combination of flavors.
Serve the pineapple skewers arranged on a serving plate, or, for a more scenic appearance, stick them into a base made by wrapping foil around half a lemon, or half an orange, or half an apple, or half a pineapple (you can decide the size of the fruit according to the number of skewers to serve).

Salt-Free Tips
Unfortunately, for cheese and olives, there are no low-sodium alternatives (except for low-salt mozzarella which can sometimes be found in supermarkets). But for the sweet and sour peppers, there is a low-sodium alternative: making them yourself. 😀 While I plan to add the recipe here on the blog (it’s a homemade production that I’m currently missing), I’ll leave you the recipe for air-fried roasted peppers, why not try them out?
If you are interested in reducing or eliminating salt, always remember to:
▪ Decrease the salt gradually, as your palate needs to adjust slowly and should not notice the progressive reduction.
▪ Use spices. Chili pepper, black pepper, curry, nutmeg, cinnamon, cloves, cumin…
▪ Use aromatic herbs. Basil, parsley, oregano, thyme, sage, marjoram, rosemary, mint…
▪ Use seeds. Sesame, pine nuts, almonds, walnuts…
▪ Use spicy vegetables or fruits. Garlic, onion, lemon, orange…
▪ Use my salt-free vegetable granules and gomasio.
▪ Prefer fresh foods.
▪ Avoid cooking in water; prefer methods that do not dilute flavors (grill, foil, steam, microwave)
▪ Avoid bringing the salt shaker to the table!
▪ Occasionally break the rules. It’s good for morale and helps you persevere.
If you do not wish or cannot give up salt:
▪ You can still try my recipes by salting according to your habits.
