Creamy chia pudding with Greek yogurt: healthy and quick recipe

In our home, Greek yogurt is never missing: we eat it every day, for breakfast or as a snack, because it is versatile, high in protein, and perfect even in desserts.
In this recipe, I use it to prepare a creamy chia pudding with Greek yogurt, a healthy, fresh and no-bake single-serving dessert that is made in just a few minutes with very few ingredients.
Unlike classic versions – where chia seeds are soaked in milk – in this version I mix them directly with Greek yogurt. The result? A denser, more compact, and creamy consistency, perfect to enjoy both as a fit dessert and a fresh breakfast.
Greek yogurt has a higher protein concentration than regular yogurt, it is denser, creamier, and lower in sugar: ideal for those looking for a filling yet light snack, or a perfect base for protein desserts, complete breakfasts, and healthy snacks.

  • 3/4 cup 0% fat Greek yogurt
  • 1 tbsp chia seeds
  • 1 tsp erythritol
  • 0.88 oz 70% dark chocolate
  • Half tsp coconut oil (to make the chocolate shinier and crisper)

How to prepare creamy chia pudding with Greek yogurt: healthy and quick recipe

  • In a bowl, mix the Greek yogurt with chia seeds and sweetener until you get a smooth cream.
    Pour the mixture into a small glass of about 150 ml and let it rest in the refrigerator for at least an hour. If you’re in a hurry, 20 minutes are enough.
    Meanwhile, melt the dark chocolate with coconut oil, in a double boiler or microwave.
    Pour the melted chocolate over the chia pudding, creating a delicious topping.
    Wait a few minutes until it solidifies, then serve and break the surface with a spoon. A real treat!

If you want to make it even more delicious and scenic, add some shredded coconut and a few fresh blueberries before serving: they will add a touch of color, flavor, and freshness to your chia pudding.
You can also prepare it in advance and store it in the refrigerator: it will be perfect for a healthy breakfast or a light snack… but super good!

  • How long does it keep in the refrigerator?

    The base keeps for up to 2 days in the refrigerator well covered. I recommend adding the chocolate topping just before serving.

  • Can chia seeds be replaced?

    You can omit them, but they help thicken the mixture. Alternatively, you can use a teaspoon of flaxseed meal.

  • Can I use whole Greek yogurt instead of 0%?

    Yes, whole Greek yogurt makes the pudding even creamier and more delicious. It’s perfectly fine if you are not following a low-calorie diet.
