Ingredients for Sugar-Free Coffee Cookies

  • 2 cups all-purpose flour
  • 1 cup butter (at room temperature)
  • 1/4 cup stevia
  • 1 egg (XL size)
  • 1 shot of espresso

Preparation of Sugar-Free Coffee Cookies

  • In a bowl, work the room temperature butter (cut into pieces) and stevia with electric whisks for 2 minutes, then add the egg, the coffee (it must be cold, so prepare it before starting) and work for another 2 minutes with the whisks.

  • Now add the flour to the mixture and begin to knead with the help of a spoon. When it starts to come together, work it on a floured board until you get a smooth and compact dough. Wrap the shortcrust dough in plastic wrap and let it rest in the fridge for at least 2 hours.

  • After the resting time in the fridge, take the dough out, roll it out on a floured board to a thickness of 1/8 inch, then cut the cookies with a stamp cutter (about 60 small ones come out) and place them on a baking sheet lined with parchment paper.

  • Preheat the oven to 428°F, and when it reaches temperature, bake the cookies for 14 minutes (towards the end of baking, always check as each oven is different!), then remove from oven, let cool completely before enjoying, and bon appétit!

Advice

If you need to fill 2 baking sheets, do two single bakes instead of a double one, this way all the cookies will bake evenly!
