Ingredients for Sugar-Free Coffee Cookies

  • 1 3/4 cups low glycemic index flour
  • 1/2 cup coconut oil
  • 1/4 cup stevia
  • 1 egg (XL size)
  • 1 short espresso coffee

Preparation of Sugar-Free Coffee Cookies

  • In a bowl, beat the melted and room temperature coconut oil and stevia with an electric whisk for 2 minutes, then add the egg, the coffee (it should be cold, so prepare it in advance) and continue beating for another 2 minutes.

  • Now add the flour to the mixture and start kneading with a spoon. When it begins to come together, knead it on a floured pastry board until you get a smooth and compact dough. Wrap the dough in plastic wrap and let it rest in the fridge for at least 2 hours.

  • After resting in the fridge, roll out the dough on a floured pastry board to a thickness of about 1/8 inch, then use a stamp cutter to cut out the cookies (you’ll get about 60 small ones) and place them on a baking sheet with parchment paper.

  • Preheat the oven to 428°F, and once it’s ready, bake the cookies for 14 minutes (always check towards the end as every oven is different!). Once done, remove them from the oven, let them cool completely before enjoying, and bon appétit!

Tips

If you need to fill 2 baking sheets, bake them separately rather than simultaneously, so all cookies bake evenly!
