Ingredients for preparing baked turkey and spinach meatballs
- 14 oz ground turkey
- 4 oz spinach, frozen
- 1 tbsp grated Parmesan cheese
- 1 egg
- 1/4 cup water
- to taste salt
- to taste pepper
- to taste nutmeg
- 5 tbsp breadcrumbs
- to taste extra virgin olive oil
Steps to make baked turkey and spinach meatballs
To prepare the baked turkey and spinach meatballs, first take the frozen spinach and cook them in a pan with 1/4 cup of water. I used leaf spinach, but you can use cubes if you prefer. Once cooked and the water has evaporated, salt them, squeeze them well with your hands and let them cool. Once cooled, put them in a blender with the blades, add the ground turkey, egg, grated Parmesan cheese, salt, pepper, and nutmeg. Blend everything well, then pour the mixture into a bowl. Add 5 tablespoons of breadcrumbs.
If you see that the mixture is still too soft, add more breadcrumbs. Also, put some breadcrumbs on a plate, shape the meatballs with slightly damp hands, roll them in the breadcrumbs, and place them on a baking tray lined with parchment paper. Meanwhile, preheat the fan oven to 350°F. Drizzle a little extra virgin olive oil over the meatballs and cook them for about 30 minutes.
Remove from the oven and let them cool slightly. Your turkey and spinach meatballs are ready to be served.
Storage and tips
You can store the meatballs in the fridge in an airtight container for 2 days.
