Sweet Christmas Tree with Mascarpone Cream

The Sweet Christmas Tree is a show-stopping, delicious, and surprisingly easy-to-make dessert.

For this recipe, I made biscuit dough discs of various sizes which, once stacked, take the shape of a real little tree.

Between each layer, I filled with a soft and delicate mascarpone cream, enriched with cherries. To complete the dessert, lots of cream puffs and red cherries (for a decoration reminiscent of Christmas balls) and a chocolate star on top.

This Christmas tree is perfect for holiday lunches and will win your guests over at first sight!

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 9 oz egg whites
  • 5 oz egg yolks
  • 18 oz mascarpone
  • 1 1/2 cups heavy whipping cream
  • to taste cherry with syrup
  • 1 tbsp dark chocolate
  • to taste candied cherries

Steps

  • To make the Sweet Christmas Tree, in a bowl, or in the stand mixer, beat the egg whites until stiff peaks form.

  • While continuing to beat, add the sugar in three separate portions and then add one egg yolk at a time followed by the vanilla extract.

  • Sift the flour into the bowl and mix everything with a spatula, stirring from the bottom up to avoid deflating the mixture.

  • Pour the mixture onto two baking trays (12×16 inches) lined with parchment paper. Level the surface well with a spatula and bake in a preheated fan oven at 356°F for 10 minutes until the surface is golden brown.

  • Once baked, remove from the oven and allow to cool. Then, using a cake ring, cut out six discs: one of 8 inches, one of 7 inches, one of 6 inches, one of 4 inches, one of 3 inches, and one of 2 inches.

  • In a bowl, whip the cream until stiff peaks form, then add the mascarpone and mix gently with a spatula using a bottom-up motion. Transfer the cream into a piping bag.

  • Melt the dark chocolate in a double boiler. Line a small plate with a piece of parchment paper and place a small star-shaped mold on top.

  • Pour the melted chocolate into the mold. Place in the fridge for 15 minutes to set the chocolate.

  • Take the largest biscuit disc and place it on a serving plate, forming a layer of cream and topping with a spoonful of cherry.

  • Continue in this manner with all the other discs, arranging them according to diameter: from largest to smallest. Finish with puffs of cream.

  • Decorate the edges of the tree with puffs of cream and candied cherries. Place the chocolate star on the top of the tree. Enjoy!
